Is there a clear cut benefit to spreading 3000 calories evenly over a whole day?
Are there any drawbacks to eating three 1000 calorie meals, or maybe 2 1500 calorie meals instead?

No real differences.
However, I would try to consume most of cals around my workout (both before and especially after). Some people avoid eating high calorie meals before bed, mainly because you don't need much energy to go to sleep. But I would still advise you to eat a small portion of slow digesting protein before you hit the sack.

It isn't a huge deal no, but if you are cutting then spreading them out will help with the hunger pains. The main things are to make sure you are taking in some fast digesting carbs and protein after your workout, and to make sure you are getting enough protein and healthy fats.

spacing them out would prevent your body from falling into a catabolic state.
I would think 1-2 big meals would mean your body would be in catabolism for a longer period of time between the meals.
Thus especially on a cut, spacing of meals is very important
