I started my fitday journal today and was somewhat pleased with the results. I was aiming for 5k calories/day and was suprisingly close to that with 4712 yesterday. Although I didn't come anywhere near where I wanted for protein bringing in only 126g.

I do have to say it is hard to get that many meals in on the days that I work being that I am in an ambulance for 24 hours straight. My main question would be is it ok to substitute more than just a couple meals a day with MRP's on the days that I work just for portability or would that hinder my results?

what the hell did you eat to only get 126g of protein from nearly 5000 calories?

I would cut out he fast food. Try eat clean.
