32 yrs old, 185lbs, 5'6"

I started to work out march 2003, but not until recently (Jan 2004) started to eat right, protein, etc.
I'm bulking up now, and gaining mass. with this mass I got some fat I had lost around my belly a few months back.

My question is: when ready to cut (and I'm sorry I sound ignorant maybe, but I'm kind of new), when ready to cut, what should I do as far as supplements and meals go.

Currently I have some Whey before and after work out (around 7:30am and 9:30aam)
then some egg whites before I go to work (around 10am)
then at 12pm I eat tuna, and have some creatine too.
later by 2pm have some chicken or beef along with some wheat bread and veggies
Then by 6pm I usually eat some more of the same (2pm) or lighter, along with some more whey.

I know all this info is brief, but I need some help.
I know this much, I whould increase the cardio work to at least 30 or 45 mins daily. But I was wondering what should I do about the work out and meals, I'm currently lifting heavy 3 set of 10, 8 and 6 (6 at the heaviest).

Any info, will be very much appreciated

the most important thing will be to track your intake and your weight using a tool like dietorganizer.com
