Did you get this idea from those stupid low carb bars? They have the fiber on there that supposedly negates some of the carbs, thus making it "low carb" along with sugar alcohol.
Prob has nothing to do with this, I just saw a bar like this that said 2g of carbs and on the back there was 24...stupid stuff.
And to answer your question...no.

You don't count fiber when counting "net carbs", but it's still 4 calories per gram, so you do include it in your total caloric intake for the day and factor it into your protein/fat/carb balance.

Fiber has 0 calories.
If you're tracking carbs for some kind of low carb diet, fiber will not count towards your carb total. If you just want to know in general for your daily carb total, it really doesn't make a difference.

Fiber is very important though... can get nasty if you are too low on fiber

Well it depends on the type of fiber. Cellulose for instance literally has 0 calories.

You must count fiber, or you will overdose on it, and spend all morning in the bathroom, or maybe that was just me a couple of months ago.

I usually supplement my diet with fiber with about a teaspoon per day, not too little but just about right. As you said, yes you can have too much but I'd rather that than too little. Anyway if you are having too much just take consume a little less fiber.

This stuff drives me nuts.
I recently saw "Low Carb Mayo".
Ummm... okay... how come the mayo next to it was all fat and protein? This one was 10% more.
And my wife brought home some low carb peanut butter. Okay, cool... let's see.... the label says 33% fewer carbs. Cool.
Yup... sure 'nuff... 2 grams instead of the 3 listed on the old one. DOH!
