high fiber apricot bread
1 1/2 cups oatmealflour(blend oats in a blender until fine)
1 tablespoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1 1/2 cups wheat bran
6 ounces dried apricots
1/2 cup applesauce
1 cup boiling water
2 egg whites
1/2 cup sugar free maple syrup
1 teaspoon vanilla
stir together oatmeal flour baking powder,baking soda,salt,and cinnamon.In a seperate bowl combine wheat bran,apricots,applesauce and water Stir well.In another bowl, blend eggs,syrup,and vanilla.Add bran mixture and egg mixt.to the dry ingredients and blend well.Pour batter into loaf pan with nonstick spray Bake at 350d for one hour or until knife or toothpicj comes out clean

Mango-Lime parfait
Crust
1 cup(250ml) almonds soaked 8hrs
3tsp(15ml) maple syrup
Filling
4 cups chopped mango(about 5 mangoes)
1 cup (250ml) lime or lemon juice
1tsp(5ml) lime or lemon zest
4 to 8 dates pitted and chopped
for crust: after soaking almonds dry them with a towel.Finely chop almonds in food processor.Mix in maple syrup
set aside
for filling: In a blender,place the mango pieces blend until smooth.Add the juice,zest and dates process until smooth
Take out parfait or winr glasses.Place some of thr crust mixt. at the bottom of each glass,add a layer of 3 or more tablespoons of the mango mixt,add another layer of crust Repeat layers finishing the crust
