if u are trying to bulk.. eat more.
usually on my rest days i eat more than i usually do.

I keep my diet consistent at about 2k-2.5k from day to day, but my goals are different from yours. I'm working on a moderate increase in muscle mass while seriously cutting 40 years of fat. Done well so far, dropping 35 pounds of fat and adding about 5 pounds of muscle.

It doesn't really matter. Some do, some don't. Your total weekly calories are what's going to be important. Figure out how many calories you need to gain a certain amount of weight per week and then divide them up how you wish. Lots of people like to take advantage of the "anabolic window" after a training session (as well as the increased appetite that usually follows a hard workout), and thus eat more on training days. In other words, if you're getting down to the science of nutrient partitioning then yes, you will probably consume less calories on an off day.
