Can anyone provide some simple crockpot (or at least a link to) recipes. I got myself a crockpot & a cookbook but everything in the book is complex. Im just looking for simple beef & vegetable stuff.

From what I gather....
Toss in a large cut of meat, something like a roast, something thick that needs awhile to cook. Then pop in lots of vegetables (baby carrots, potatos, onions, whatever sounds good to ya Don't forget the spices. Don't cut the potatos to small or they will cook to fast. Make sure they is plenty of liquid in the crock otherwise it will burn whatever is on the bottom. Leave that going for hours (depending on what power level ya put it on) and after maybe 5 hours cut the meat to see if its done, and try a tator.

Not a very strict guidline to go by, but it works for me.

Get some lean beef cuts (stew meat). 2 pounds
Cut 3 carrots into slices
Cut 3 celery into slices
Cut 4 medium potatoes into slices
Cut 1 white onion into slices.
1 can of tomato soup. (10.75 ounce)
1/2 tablespoon of pepper

Layer the bottom of the pot with the onion and potatoes.
Spread the beef.
Sprinkle in the carrots and celery.
Pour (spread) the tomato soup over the top.
Add 1/2 cup of water.

Cook for 8 or 10 hours.

4 or 6 chicken breasts.
1 package of dry italian dressing.
3 medium potaoes cut into chunks.

Put contents in pot. ( I have a large crock pot so I use 3 cups water but smaller ones should only require 2 cups)

Cook for 8 hours

Beef Roast
2 or 3 pound roast
4 potatoes cut into slices
3 onions cut into slices
4 carrots cut into slices
1/2 tablespoon of pepper
2 beef boulion cubes
2 cups of water.

Layer bottom with onions and potatos.
Place in roast and add carrots.
Sprinkle pepper on roast.
Add water.

Cook 8 to 10 hours.
