For something a little different, don't forget about egg foo yung.
Just check out the recipes on the net and make your own healthier version.
It's great for protein, though
I haven't figured out the exact estimate of it's protein content yet.
A typical recipe:
6 eggs or 8 egg whites
1 small chopped onion
1/2 cup chopped sweet red pepper( optional)
1 cup bean sprouts
1-1 1/2 cups cooked chicken or beef ( cubed)
salt, pepper and spices of your choice.
Beat the eggs in a rather large bowl and add the rest
of the ingredients.
Put about 3/4 of a cup of the mixture onto a griddle on your
choice of oil.
Cook until it's light brown on both sides.
