Since a lot of fruits are pretty low on the GI (apples, blueberries, plums, etc), are they good for after-dinner snacks/meals?

Most fruits are metabolized into sugar for the most part, so while it's not unhealthy, it might not help you fall asleep. A piece of fruit before a bit of slow digesting protein however, is a great idea, as the sugar from the fruit will raise your blood sugar so the protein can be used more efficiently.
