So I was looking at the nutrition info on one of these "low-carb" bars and the info says it has maltodextrin in it. So does that mean that even though it only has "6 net carbs" or something, those carbs are VERY high GI? (since malto is like 100 right)

Basically, will it still spike insulin since it net carbs it does have is from malto?

Pure maltodextrin has a GI of roughly 100. By itself.
In a candybar with fats and other components, it will digest slowly, lowering the GI.

WHy are you worried about GI anyway?

Um because if I'm looking for a low-carb food to eat it would defeat the purpose to get one that has a high-GI

GI doesn't matter one bit on low-carb. Your pancreas will still put out the same amount of insulin either way.
