This is an old recipe from the settling days in Australia. We use "Barramundi" over here which is a big strong fighting fish. If you can't get barramundi just use perch or something like that. I'm cooking this up tonight! Can't wait. Im going to serve it just with a pasta salad (read:carbs) and a leafy green salad.

Almondine Barramundi.

2 pounds Barramundi Fillet
1 cup milk
1 egg, beaten
1 cup flour
1/2 teaspoon salt
1/2 cup vegetable or olive oil
1 1/2 cups sliced mushrooms
1/2 cup chopped hickory-smoked-flavored almonds
3 tablespoons butter (please do not use margarine)
2 tablespoon Spice Hunter Fish Seasoning


Mix the milk and egg. Combine flour and salt. Dip fish into egg mixture, then lather with flour mixture. Seal fish in oil over medium heat, turning once. Meanwhile, combine remaining ingredients in saucepan and saute over medium heat for 5 to 7 minutes. Transfer fish to serving plate. Portion mushroom/almond mixture over fish.
Serves 6 people.
