I've decided to start and write down what I eat for one week. I'm going to keep track of calories and carbohydrates, is there anything else I should record?

I am brand new here and I shouldn't be posting answers really because I don't know jack but someone pointed me to a site called http://fitday.com and I started keeping track of my diet there and it does a much better job than you could ever do.

Why only calories and carbs? May as well do protein and fat too.

If I was going to put an order of importance for what I count it would go calories > protein > fat > carbs.
