I eat a lot of mushrooms, mainly because they have a great texture and flavor when cooked correctly and they make it seem like there's more beef in my pasta.

Actually, from what I've heard, they're high in vitamins, especially Bs. The best ones are the exotic mushrooms... shitake, maitake, straw, portobello, crimini (baby portobello), oyster shrooms, etc. I love 'em :)
