I notice a lot of people on this forum eat oatmeal. What are the benefits and what type is best (The instant kind usually has a lot of added sugar)?

Fiber, low glycemic. It's supposed to help lower cholesterol. Get the plain instant or quick cook variety. Those have no added sugar. You can do them in the microwave.
