Okay, I know that Milk contains Whey and Casein. Eggs contain Casein, so what is animal protein? Would consuming protein from fish, chicken, or lean beef have the same slow release effect as casein or would it be somewhere in between?

eggs do not contain casein, but albumin

Animal tissue contains well animal tissue.
there composition varies depending on the animal
how fast it is digested also varies
for instance ground meat is more rapidly digested than say steak

look at the product sold on trhe shelves then find the equivelant on the deli counter. all meat is variable so you can not give a exact number.
but top side, silver side are normally quite lean. shin is also lean but tough.
turkey steaks are lean as well.
