that a person can drop fat and harden up with a 3 meal a day diet? I am trying to put something together where I can stick with it as easy as possible because I am low on convictions.
The workout I do is 2 muscle groups a day 3 different excerises 4 sets each for instance
monday : chest and tri's
tuesday : back and Bi's
wednesday : shoulders, neck and abs
thursday : legs
friday : cardio
and I am trying to follow every workout with 20 minutes of cardio. either ski machine or I am trying to work up to running.

Yes. It doesn't matter how many meals you consume.

so basically take the prot, carbs and fat and instead of making 6 meals out of it make three and thats it? And I thought there was only a certain amount of prot, your body can handle per meal

Too low. I can cut on 2000 calories, albeit very, very slowly.
Try 2500.

but being fat like me I thought with less cals I would I drop it faster

You will. At first. And more of it is likely to be muscle.
You're also more likely to slow down your metabolism - unless you incorporate regular refeeds, your body will "know" what's going on: you're dealing with a famine. It will slow down accordingly, to help you survive it.
In order to drop a pound of fat, you need to create and sustain a 3500 calorie deficit. The magical and often quoted "drop by 500 calories" cut should, in theory, drop a pound of fat per week.
If only this loss remained linear...
