it's also inexpensive, which is why many BBs like it

ultimately, beef is beef (for the most part)

I believe flank is quite a bit leaner than some other cuts, which is why it's preferred for bb, and also why it's much cheaper.

I LOVE flank steak. Great for making fajitas too.

Great cut of meat! Unfortunately many people are catching on, and the price has gone up a lot in the last few years. (Somebody needs to shut Bobby Flay's mouth!)

Is that exactly how it is labeled at the grocery store? "Flank steak"?

I love the stuff. Its "somewhat" lean, but you should still try to avoid the fat it contains. I like to trim the sides of the steak before i cook it.

Unless it was marinated overnight, isn't flank steak like chewing an old boot?

darthdave,
that's an issue with any really lean steak...there's not much fat so the meat can really dry out when cooking, especially medium-well (how I like it). Plus the leaner meat cuts are from parts of the body that get used alot, and thus aren't so tender to begin with.

but pop it in the freezer for an hour, then cut it in thin strips and its great for stir-fry and fajitas, or any recipe where thin strips or slices could be used. works great for chili too!

Run a torch over it and eat it bloody.

I actually love flank steak, my other favorite cut is round steak. I just trim off any fat, marinate, and throw it on the grill :)

The trick with flank steak is to slice it across the grain once it's cooked. Do this, and it's tender and wonderful. Don't, and yes, it's tough.
