3 big handfuls of raw spinach
1 large cucumber cut into slices
1 large tomato cut into slices
1 large squash cut into slices (I like to microwave it for a few minutes before adding into the mix)
2 cups green beans
1/4 onion cut into slices
1/2 green pepper cut into slices
small handful of sliced green onions (chives)
4 hard boiled eggs cut into slices (I use omega 3 variety)
4 tablespoons milled flax seeds
1 fresh sqeezed lemon (juice)
2 tablespoons extra virgin olive oil
4 tablespoons balsamic vinegar
spices to taste (I like Ms. Dash lemon pepper + original)

Mix all this crap up with a pound or two of meat. I use a mix of chicken, extra lean ground beef, and turkey.

I like to take this to work in a GIANT bowl and eat it at my desk throughout the day. Looks like crap but it tastes pretty good and is super healthy.

If I made it with a pound of chicken and a pound of extra lean beef, it all comes out to 2258 calories, 99 fat, 92 carbs, 35 fiber, 273 protein.

The only nutrients that I'm not getting enough of is Calcium, Thiamin, Vitamin D, and Zinc. Of course you can fix that by adding some cheese or drinking some milk. I always drink a few cups of milk and take a multivitamin for good measure.
