Was just reading an article which I thought was pretty good all in all. The author was speaking of a form of carb called "resistant startch" which is extremely low GI (20) and is released slowly, so would be beneficial overnight to regulate insulin and keep glycogen levels a bit more controlled.
Just wondering if anyone has heard of this or any thoughts or examples of foods in this range?
