View Full Version : Pecan crusted catfish -personal fav

1 filet of catfish (or bass, perch, etc...no red fish)
1 cup of fine-ground pecans
1 tbsp of margerine
1-2 tbsp of Dijon mustard
cayenne pepper, rosemary, thyme - usual italian seasonings.

Preheat yo oven to 415 degree's .

Now mix the pecans, mustard, marg, seasonings in a bowl - then stick it (covered) in the micro for about 10-15 secs. Wash and place your fish on a glass baking dish, you can place it over a bed of spinach, broccoli, shrooms, cucumbers or squash if you want. Then cover the top (round side) of the fish with the pecan mixture. Toss it in the oven, cook until ready (normally about 10-15 mins).... I top mine with some garlic and boiled baby taters.
