I am about 5' 8" around 160 pounds. I recently started to work out. Before I started working out I would eat A LOT. When I started to work out I still kept with my large diet. I am not sure how many calories, but theoretically if I kept the same large diet and started lifting wouldn't I have a lower body fat percentage since lifting burns calories?

Also, I am not sure if this was a good idea but.... exercise (boxing) on the day after a workout to lose some fat.

It's unclear whether you want to bulk (gain muscle and some fat) or cut (lose fat and some muscle).

Eat more.

Just because you're working out on the same calories doesn't necessarily mean you'll drop bodyfat - you CAN drop muscle, too.

Built - Do you think that I should still eat more even if I had been gaining weight with the diet while I was not working out?

To everybody - Do you guys think it is a bad idea to exercise on days that you don't work out?

If you want to bulk, it's very simple math. Eat more calories than you burn. So if you were gaining before you started working out and you are still gaining now, cool. If not, increase your calories. As for exercising on days you don't weight train, it's perfectly fine.
