the difference is in their structure - monos have one site on the carbon chain free to accept hydrogen, polys have 2 or more, saturated fats are fully hydrogen-saturated and have no free sites.

polys are essentail for their Omega-6 and Omega-3 fatty acids content. Monos can be synthesised from adequate poly intake.

i'm in the midst of writing an article about this and other stuff on fats.

i can;t really answer your first question due to the lack of information you have given.

p.s. not all saturated fatty acids are bad.

What do you mean monos can be synthesized from adequate poly intake? How does one fat synthesise another? Is there ATP-ase involved. I would like to more about this whole process is there a good thread to research accurate information on this catabolic process?

hha no ATP-ase isn't used. That's a totally different process.

The body can synthesis monos by hydrogenating polys.

why not do a search of the diet forum and look specifically for posts by Doc.
