Has anybody had an success with it, it doesn't rise the same as plain white, so I imagine cakes would be a rather difficult thing to make. But what about cookies? I was thinking about experimenting and making some good breakfast cookies...

Use powdered oats.

Just blend the oats into a powder. Works great in cookies.
