Would I be right in thinking that canned tuna has been cooked?

No I eat it raw all the time. Though you can make tuna burgers mix an egg white or 2 to a can of tuna and mix in a little curry powder fry them into patties and wa la tuna burgers middle eastern style.

Fresh tuna = red and 'slimey' like uncooked chicken brests.
Cooked tuna = grey/brown colour and flakey.

tuna burgers are OK. I just fixed them b/c eating 3 cans of tuna plain a day can get old after a while so I try to mix stuff in my tuna so its not as boring. Key is not to use a lot of curry powder. First time I made them the burgers smelt like a middle eastern guy.

I've also made tuna burgers and they are quite tasty.
