Since joining this forum, I've been getting really interested in the whole nutrition thing. Thought I was doing well before, but I've realized how much cleaner I can eat, and feel better because of it.

Now, I have a question. In my adventures reading labels, I always see Total Carbohydrates and Dietary Fiber and Sugars below that...and those two never add up to the total. What are the rest of the carbohydrates?

Starch

Starch

Is this always the case? Is this good or bad, generally?

Sometimes I see the listing "other carbohydrates"

Maybe not always but I'd say mostly.

Pasta, potato, breads, maize (corn).... all loaded with starches. So if you're noticing the discreprency in products like those it's probably starch.

It's pretty much anything I look at. Sunflower seeds, for example, have 6g total carbs, 2g dietary fiber, and 1g sugars.
