This one is very simple, and very tasty.

Cottage Cheese Nachos:

6 tablespoons cottage cheese
3 tablespoons store-bought salsa
Tortilla chips

Preheat oven to 350F.

Mix the cottage cheese and salsa well.

Top tortilla chips with cottage cheese/salsa mixture, stick on baking pan, and bake for approximately 10-15 minutes, or until the tortilla chips start to brown around the edges.

I just made these as a very late-night (early morning?) snack and they are fantastic. The cottage cheese and salsa together make an excellent dip cold as well. I prefer about a 2:1 ratio of cottage cheese to salsa, but you might want to experiment with that as per your tastes.

A healthier alternative to tortilla chips probably wouldn't hurt either. I can see this being very good with some flat bread, though. Possibly also on a baked potato.
