Just a quick question

most of the time i train at night about 7pm after training il have a postworkout drink, containing 60g dextrose and 1 scoop of whey, then a hour later il have a meal containing bopth carbs and protein. this is about 9:15pm.

will the carbs i eat at this time be stored as fat seeming its late at night and i usualy go bed about 11? or will they get used?

Them being stored as fat depends if your eating over maitenence. You are doing the right thing as long as your calories are at the correct level.

i eat over maintinace on training day by about 500 cals, my goal is gaining muscle.

If you're trying to get bigger, eat over maintenance every day.
