My roommate has a george foreman that we can all use, but I've never used one before. If I'm doing chicken breasts, do I just throw them on there? Do I need oil or anything, or something so it doesn't stick? Or just pop it on and close it for x amount of time until it's done? Figure it will be a good way to get some good protein in.

Just toss it on there.
Be wary though it's really easy to overcook.
I put in on frozen. 3-5 minutes later I turn it so it thaws evenly. About 5 minutes after that I cut deep slits into it. It's done about 5 minutes after that.
