I'm taking a week off of lifting to recoop (6 months straight) and I know that since my main source of burning calories will be taken away (lifting and HIIT) all the weight I gain next week will turn to fat. How could I adjust my calories for this off week?

Why would it turn into fat? You think your muscles are 100% repaired going into your week off after heavy training?

How many calories do you think you burn lifting? By my observations and calculations I burn 220 or so ... on max effort deadlift day. Three times a week at the same intensity is 660 of the 15,000 I use (burn) in a week to maintain 160 pounds of body weight. That's NOTHING metabolically speaking. A sixth of a pound.

You'll be fine. Just eat at maintenance (i.e. Eat what you eat on off "days"). Pretty simple.
