1/2 cup diced onion
1 cup brocolli
1 cup mushrooms
1 tablespoon olive oil
1.5 cups swiss cheese
5 large eggs
10 oz skim milk

Saute veggies in olive oil
Mix eggs with skim milk/cheese

Pour egg mix on veggies and bake 350 degrees for 40 minutes

1300 calories, 84g fat, 37g carbs, 93g protein

healthier way of doing it (haven't tried this) would be to swap in low fat cottage cheese for swiss cheese, which would make it:

900 calories 43g fat, 41g carbs, 89g protein.
