why can't you cook with flaxseed oil, just like you would with vegetable oil, or olive oil?

I dont know...... because I thought it would be healthier to use flaxseed, but I guess you can't cook with that, so I was just wondering why.

The reason you cant cook with it is that it readily turns to transfats when heated. It will go rancid if you even leave it out of the fridge.


Olive oil is not so fragile, so it can be used for light cooking. Pretty much any oil you use will turn to transfats if used for frying, as the heat is too high to maintain its healthy structure.
