6 oz uncooked is not that much salmon, really. When it's cooked, it reduces to approx. 4.5 oz, I think .

What happens to the rest? Is it all evaporated water weight?

I believe so. When you cook beef, for example, the general ratio of uncooked to cooked weight is 4 oz to 3 oz.
