Slammin Turkey Picatta Recipe
I eat this once or twice a week and it is one of my favorite dishes.
1 pkg thin sliced turkey breast cutlets
1 bottle capers
1/2 cup water
Begin by seasoning with Natures Seasoning on both sides of the cutlets. Then, very lightly flour both sides of the cutlets. Brown both sides of the cutlets in olive oil in a large frying pan and remove until all the cutlets are browned on both sides. There are usually 8 to 10 cutlets in a package. After all the cutlets are browned, return them to the pan on medium heat. Pour the capers and water over the cutlets, cover and let them simmer for 5 minutes. Thats it, and they are delish.
I usually serve with steamed zuchinni, yellow squash, asparagus, and sliced red bell pepper. For a real treat, I cook up some whole wheat pasta, toss with a little olive oil, chopped fresh tomatoes, crumbled feta cheese, and salt and pepper to taste as a side.
All this can be done in less than 20 minutes and is one of my favorite meals.
