Mashed Potatoes - for a cheat day
This is my favorite cheat day food ever - and possibly my favorite dish.
Take 3 big yukon gold potatoes, boil and then mash them mixing in a bit of milk and butter.
Grease a pan and shred up 1 cup of cheddar cheese (orange). Get your salt, pepper, and spatula ready...
After the pan is greased and searing hot, take your mashed potatoes and drop them on the pan to start frying them. Add the cheese on top (and some ham if you have it around). Be sure not to let the potatoes to rest too long or they'll stick. Sprinkle on some salt and pepper. Fry the potatoes. Half way through, flip them over like a pancake, fry, then one last fry on the original side. Should be golden brown crispy outsides now.
Remove from the stove and put on a plate. Add a topping layer of sour cream and enjoy. This stuff is orgasmic and so easy to make.
