The rack at my local gym ends up mid-thigh at its lowest setting. I would have to stand on 3-4 plates to get it just below knee level.
Anyone else do this and find that it's stable enough?
defınıtely not. better off to do ıt on a bench.

I think he means resting the barbell on a bench - I used to do this.
thats how i do my rack pulls. i grab two to three 35lb plates and step on those.
try pulling off boxes or using bands - gives the bar a much more natural stance.
Is there one of those reebok step things about? They would give you the 7-8 inches height you need to bring the bar from your thigh to your knee, just below or where ever you want to pull from. That is what i do. More sturdy than using plates imho.

That reebok thing bends 3" when I pull off it. I'd be careful with it.
You could do them off 2 benches if needed. A better option would be reverse band pulls, since it's more like a natural pull, the movement from a rack pull can be completely different.
Try putting the bar onto the plates.
We do have aerobic steps, but I have no faith in them even with plates underneath.
Putting the bar on boxes/plates is an option I'll try. Band work will be incorporated in the future.
theres what is called silver dollar deadlifts where you place rubber pads under the weights to raise the bar off the floor. OR, bring you own set of jack stands. I use them at home for rack pulls, works great and wont damage a bench

I pulled both of the safety bars out of the rack, set 1 of those Reebok stepper thing on each side of the rack then set the bar with the 45 plates on top of the Reebok stepper. This had the bar just below my knee, but people in the gym were looking at me like I was crazy though.
