Hi,
Due to time restraints I end up doing a long workout session on all muscles every three or four days. What I was wondering is in this instance is it important to be consuming vast ammounts of food and protein in particular all through the rest days or is it only so important the day I workout and the day after. It seems pointless at the moment to be eating like a horse three days after I've lifted as I don't feel the muscle is still repairing and I'm just putting fat on not muscle.
Any thoughts?
Look at it overall by the week. Your body constantly needs protein to build/repair tissue. You maybe able to drop calories a bit if you desire, but make it so your average calories work out where you want.

You might not feel like your body is repairing on your off days, but you are wrong. You need protein every day.
