When cutting fat, if my total calorie intake is 2000 calories, does that mean that on cardio days when I burn 500 calories, I should still eat 2000 calories, or more to compensate?

The same. What would be the point in eating more ? You may as well have not done any cardio.

Do what Yates said...the whole point in doing the cardio is to help to create a calorie deficit in the body. Theoretically if you do cardio 7 days a week and burn 500 calories each time then you'll lose a pound of bodyfat per week. However its just in THEORY....many other factors come into play as well....

Good point. I didnt really think about that question did I? I did hear a rumour that less carbs affects your brain, maybe it was that!

It effects your brain in that your brain requires glucose to function. If you up your natural fats .... you should be ok. It only messes with your head when you drop real low.
