milk has 5 grams of sugar per 100ml in it. at least that's what skim milk has, so if you are cutting you wouldn't want the sugars.

The reason why they state 'if trying to elminate milk from diet' is most likely for ppl who are trying to go on a diet. Cause milk contains more calories, and by using milk instead of water will also increase the sodium, fat, sat fat and carbs amount.

That does not certainly mean a bad thing though, if you're trying to bulk, feel free to mix with milk for the extra protein and calories. I like using HL milk, each 200 ml has 10 g protein, 11 g carbs and only 3 g fat.
    Change is good.

Milk usually makes protein taste better IMHO, but whether or not you use it depends on how you're organizing your diet. If you can/want to allow for the calories, then go for it.

I try to take my creatine with Grape Juice though...

depends on whether you're lactose intolerant.

I've heard protein absorption is slower when mixed with milk than water.... anyone else heard that?

Not only protein, but everything else too. Never wondered, why some drugs should be taken before, and some after meal?

That's why Yates suggested to take your postworkout protein with water I guess.
