I had my first serious workout in years yesterday and I feel great. Sore as hell but great. I've started eating a high protein diet. Trying to do the bodyweight/grams of protein thing but I have a question still. After the first workout is it best to wait until the soreness is gone before working out again or should I simply rest for a day and then hit the gym again regardless of soreness?
I would wait until your soreness is gone.

Wait until you can get a full range of motion again with the movements you'll be performing (shouldn't take too long...3-5 days). I would go as soon as things feel moveable again and not like they are going to rip or tear from your body.
Definitly wait until the soreness fades and you can preform the lifts you want to with correct form. For me, the best way to minimize soreness is to eat, eat, and eat after an intense lift that gives me intense DOMS.

If you did upper body on your first day and are scheduled to do lower body next I would't wait too long- a couple of days, prolly. Make sure you consume potassium (bananas).

Should I consume bananas on a regular basis or just at the beginning?

eating bananas all along is not gonna hurt you... its good to be well nourished

you can perform active recovery. Do about 2-3 sets for that muscle with really light weight and high reps to increase blood flow to the muscles and can really help in shortening recovery time.
DOMS = Delayed onset muscle soreness.
I get it bad in my legs, but once you get into a routine, the soreness will fade some. Don't be stressed by this, since soreness is not the deciding factor in gains you'll make. I find that stretching between workout days helps with soreness some. I find that soreness gets worse if I don't stretch, but that's just me. Different people work differently.
Bananas have a lot of potassium in them, but so do alot of other things. Thinking bananas are a cure all isn't really accurate. They're good for you though, so if you're not on a strict diet, eat them as much as you want.

I suggesterd bananas only for the easy potassium infusion- it is said to aid with muscle soreness. Bananas don't make you huge.
