I know there are hidden carbs in eggs and cheese, things like that. How much cheese or egg matter would I have to eat to get a significant (measurable) amount of carbohydrate?
1 large egg or 1 oz of almost all cheeses have less than 1 gram of carbs

Budiak- if you are on the metabolic shift program , than I would suggest you count them. Then you will not have any mistakes.
That is afterall the only number you really have to worry about if you are strictly doing NHE type program.
The only cheese you need to worry about is processed cheese like american (~2g/slice). I would assume that any processed food will have some form of hidden carbs like maltodextrin...
One sure fire way to check for hidden carbs
Take the total protein count per serving x 4 = ___
Take the total fat count per serving x 9 =____
Take the total carb count per serving x4=______
See if your number matches their number for calories. If it does not then the balance or the differance between the two numbers is hidden carbs......
