Why not just work eahc muscle group each day
ex. day 1:back/ day 2:chest/ day 3:arms /day4:legs+abs /day5:shoulders

I wouldn't work arms on a separate day. Back will work biceps and chest will work triceps. I think you are better off taking out that day 3 and splitting it into back and chest day. The same could be said about shoulders.
There are stabilizer muscles that get worked with each main workout. Just because you focus on one muscle doesn't mean you don't hit others.
Also people don't want to have to workout everyday. Muscles take time to heal. If you did a 3 day split (back/legs/chest) and didn't take days off, your muscles wouldn't have long enough to heal before you hit them again.
Personally, I don't like the gap you have. Doing chest one day, then waiting 5 more days before doing it again, muscles'll get cold if you ask me. Plus, if I were to do that then I'd come home feeling like I didn't have enough of a workout, either that or I'd over-exert those muscles and just do harm to myself. But that's just me.

I do a 5 day split right now with 2 off. It looks like this:
monday - 6 sets back, 3 sets traps, 3 sets bi's, 3 sets shoulders
tuesday - 5-6 sets squats
wednesday - 7-8 sets chest, 4-5 sets tris
thursday - 5 sets calves, 5 sets abs
friday - 6 sets deadlifts, 3 sets hamstrings
If I were to do a 7 day split it would look like this:
monday - 6 sets back, 3 sets traps
tuesday - 5-6 sets squats
wednesday - 7-8 sets chest
thursday - 5 sets calves, 5 sets abs
friday - 6 sets deadlifts, 3 sets hamstrings
saturday - 3 sets bi's, 3 sets shoulders
sunday - 4-5 sets tris
