Disclaimer: As a rule, I usually don't like posting measurements because I don't cook using precise measurements. However, I recognize that not everyone is experienced in the kitchen, so here you go.
This recipe makes enough for 2 people (or 1 ravenously hungry eater).
You will need:
1 package brussel sprouts
3 T. extra-virgin olive oil (EVOO)
Kosher salt, to taste
Black pepper, to taste
1 T. chopped fresh herbs (I used Italian parsley here; chives and marjoram are great too)
Trim and halve brussel sprouts. Combine EVOO, salt, pepper and sprouts in a baking dish. Toss.
Roast sprouts in a 350 F oven for 45 minutes to one hour. The sprouts are done when they're golden brown. Top with chopped herbs and serve immediately.
*Tip: Stir the sprouts occasionally; this ensures that they cook evenly.
*Tip: Chop the herbs during the last minute of cooking. Prolonged exposure to heat and air tends to ruin their flavor so you want to add them relatively quickly.
Voila.
