Building a Monster Upper Back

When I was doing catering with the giant webbers, we just used a direct meat probe/termometer. Great tool for 2-3$ from a kitchen place.

I miss doing that stuff, we used to pump silversides/topsides with a water/mustard solution so the meat never dried out - tasted fantastic!

Yeah, I don't have the industrial size gear to play with! The times I do smoke things its just in a cut 44gal drum with some alder sawdust (prep grade), its a hassle to go to folks house to do it though. We're building our own house right now and I'm praying to the big guy that builders don't use my 20k provisional out of the loan so I can build the patio/bbq pit on the side of the house with everything built in.

Minus the froo froo TV and fire place. I think it will add at least 50K to the sell price

Made some pulled pork. Did not have a smoker on hand so I just roasted it in the oven slow and low.

The dry rub:

That is the best way to eat pulled pork! Slaw is the bomb! What did you add to the pulled pork for sauce?

Wow! That is just how I make it! I love Sweet Baby Rays sauce,try cutting it with beer it really tastes great!

Sausage Gravy and Biscuits:



Biscuits: Just the dropped biscuit recipe on the Jiffy box except replace milk with buttermilk.

Sausage Gravy: Brown Jimmy Dean breakfast sausage in pan. Mix flour and whole milk (not sure the parts) and mix with sausage. Simmer it and allow it to thicken.

Topped with a couple eggs.
