Assuming that my diet is in check, what is the best way of losing fat in about 2 weeks?

Would it be beneficial to incorporate 5-10 minutes of HIIT at the end of my workouts?

Well if you want to lose fat and don't really care about muscle, I would go on a calorie deficit of like 500 or less (you will want to lose a pound a week, losing much more in a short time isn't healthy) and do some HIIT after your workout or on off days. Just don't do your HIIT before or you'll be too tired to lift.
