Easy to make, healthy, and tasted damn good. Nice earthy taste, goes good with smoked meat!
Finely chop 2 shallots, a few garlic cloves, and 3 cups of mushrooms (I just used one 'pack' of white shrooms and figured that was 3 cups of so).
Sautee in some olive oil with some salt and pepper.
When they've cooked down and softened up, add 1/2 c. pearled barley and 1/2 c. wild rice along with 3 cups of water.
Bring to a boil, then simmer on med-low for 50 minutes or so until the water is absorbed and the grains are softened.
I could easily double the recipe and have a big ol' bowlful to eat through the week while bulking.
