Doing a SS routine and as seems to happen a lot my mind wandered to fact that sunday is a total rest day. Question is would there be any benefit or lack of from working out with SS on a system of - mon, wed, fri, sun, tues, thurs, sat as workout days ?
Yes, you need that rest to start fresh again on Monday. Once the weight gets heavy on all the lifts you will need all the recovery you can get.

I am starting to hit a plateau on SS because I don't have adequate rest time.
I really enjoy playing indoor soccer and do it one night a week. Since I am practically maximally exerting myself for about 30-40min once a week, it dramatically affects my recovery.
