    Double Almond Chocolate Chip Cookies

    Double Almond Chocolate Chip Cookies

    2 cups blanched almond flour (Honeyville Farms is the only way to go here. 5lb bags online.)
    teaspoon celtic sea salt
    teaspoon baking soda
    cup grapeseed oil
    cup agave nectar
    1 tablespoon vanilla extract
    cup dark chocolate chips 73% cacao
    cup sliced almonds

    In a large bowl, combine almond flour, salt and baking soda
    In a medium bowl combine grapeseed oil, agave and vanilla
    Stir wet ingredients into the almond flour mixture until thoroughly combined
    Fold in chocolate chips and almond slices
    Spoon dough 1 heaping tablespoon at a time onto a parchment lined baking sheet, pressing down with palm of your hand to flatten
    Bake at 350 for 7 to 10 minutes, until lightly golden
    Cool cookies on the baking sheets for 20 minutes, then serve

    I've made this a few times now and its pretty bad ass. Almost better than the real thing. Almost!!! Anyway, they pack some serious protein and fat content so go easy on them. You may need to add literaly a tablespoon more of Almond Flour depending on how "loose" the dough is. Also, once you are done making the whole batter, Id advise putting it in the fridge for about 20 minutes BEFORE forming them into cookies and cooking them. Enjoy.
