should I lift 95 pounds 12 times for 3 sets at varying machines, or 120 pounds for 5 times which would be the maximum I can possibly do?

    Neither...

You should lift 95 lbs for 5 times.
The next time you should lift 100 lbs for 5 times.
The next time you should lift 105 lbs for 5 times.
The next time you should lift 110 lbs for 5 times.
And so on until you blow past that 120 lb mark.

The secret is to start light, build up momentum, and blow past your previous strength levels. When you stall, lower the weight (not as much as the first time) and start again.
