I'm going on a very low carb diet while increasing fats what do you guys think of 60 grams of carbs as rice cakes pre and post workout? Or should I keep it to just fat and protein pwo my goal is maximum fat loss with muscle retention

As long as the carbs fit into your ratios rice cakes are fine, I would have them at breakfast and post-workout. Now if you're going with low carbs and higher fats then make sure you have periodic re-feeds to repelnish glycogen stores, if you go too long without carbs you can have bad rebound later when resumming a more balanced diet as well as many other negative effects of very low carb diets.
