what you need...
3 large bananas
1 egg and 2 egg whites
2 tbsp oil(safflower or canola)
1/3 cup of nonfat cultured buttermilk(nonfat or 1% milk can be a sub)
1/4 cup sugar plus 1/4 cup brown sugar
1 tsp salt
1/2 tsp baking soda
1 tsp baking powder
2 scoops protein powder mixed w/ 1 1/2 cups unbleached all purpose flour plus 1 1/2 cups whole wheat flour
how to make it.....
preheat oven to 350
mash nana's with fork
add eggs, oil, buttermilk, sugar, salt,baking soda, and baking powder. Beat well.
gently blend protein and flour micture into banana mixture and stir until moistened
pour into lightly oiled or wax papered 4 inch by 8 inch loaf pan
bake for 45 minutes
let cool for 5 minutes before removing it
makes 10 servings:256 cals, 45 g carbs, 10 g protein, 4 g fat
in my opinion, makes a great addition to a meal, usually breakfast, of course i at about 3 servings instead of one at a time
